Chicken Recipe Easy - Chicken Breast Chili Citrus and potato gratin

Lemon or lime and chili seem to go together well and provide a unique flavor you can't get with either alone. The combination is a dynamite mix that can spice up not only chicken and fish recipes, but also vegetarian dished. This dish is mostly low fat because of the use of olive oil instead of butter, and the use of a lean protein source like skinless boneless chicken breast instead of a more fatty ground beef or pork The 1 tablespoon of brown sugar adds some calories but I think the added flavor is worth it. The recipe is designed for two but could easily be scaled up to feed four. The first 4 ingredients can be used as a marinade to enhance flavor and tenderize. If you are in a big hurry, skip the marinating step and use the mix as a sauce. Use the usual caution if you marinate raw chicken, and then use the marinade for a sauce. If you do this, be sure to heat the sauce to boiling for a few minutes before use. Ingredients1 tablespoon chili powder 2 tablespoons olive oil 1 tablepoon brown sugar 1 tablespoon lemon juice 3 small potatoes sliced thin skin-on 3 chicken tenders (about 3 ounces), cubedInstructions1 - Combine the chili powder, olive oil, brown sugar and lemon juice to make a marinade/sauce. Note: You could enhance the flavor by marinating the chicken tenders in the refrigerator for an hour or so using this as a marinade. The left over marinade could then be added before cooking to use as a sauce. 2 - Preheat the oven to 450 degrees. 3 - Add the potato slices and drizzle half the sauce over and bake 25 minute, stirring once during the baking cycle. 4 - Place the chicken pieces over the potatoes and drizzle the rest of the marinade/sauce over them. 5 - Bake for another 9 minutes, then remove and serve.

When it comes to comfort food, chili with or without beans has to be way up on the list. I remember from grade school every Wednesday a pal and I would order 4 bowls of chili and wolf it down. My appetite for chili hasn't changed much since then but my hope to be healthy has caused me to rethink and research how chili is made. Changing from beef to chicken isn't that much of a sacrifice. If you just can't give up the beef flavor then add a little lean ground round steak in place of the chicken. The recipe has a couple of items you don't always see in chili, such as brown sugar and Mexican style chili beans (they have some green chiles). You could use Mexican style refried beans in place of the chili beans. This substitution will give you a thicker and heartier chili.By all means use this recipe as a starter and add some ingredients of your own. Note - garlic may taste bitter if cooked longer at this point. 2 - Remove the onion and garlic to a plate and set aside.3 - Melt the butter in the same skillet, coat the chicken pieceswith chili powder and cumin, then stir-fry about 5 minutes 4 - Add salt and the onion-garlic mixture, then deglaze the pan by adding the diced tomatoes along with their juice. 5 - Add brown sugar, then chili beans 6 - Bring to a boil, then turn heat down to just below boiling andsimmer for 15 minutes.7 - Serve over cooked brown rice.Comments - This is a really great tasting chili!

     I like to brown my peppered fillets in a Dutch oven, till both sides are a beautiful golden brown. I then remove the fillets from the pot and put them on a plate. Then, I pour a little amount of water in the bottom to 'scrape' up the brown remnants to mix with the water, which will later give wonderful taste to the gravy. 
     I then add about ? of the mushroom soup dried onion soup, and garlic, and stir. The browned meat is then set back in the pot, and topped with both remaining soups. Add the remaining water, if required. Set the cover on and cook for 45 mins to an hour, depending on the thickness of the fillet. When in doubt, I use a meat thermometer.When the meat is fully cooked, I take it out of the Dutch oven and let it stand for at least 5 minutes. 
     This will help keep the pork's normal moisture in. If they're cut too quickly, the moisture isn't sealed, and the end result is a dry piece of meat. But, you will notice when taking the meat out, voila...gravy is already made!The one thing that is left is to sit down to enjoy a fantastic, but simple meal.VARIATIONSTo get more veggies in your diet, add some cut carrots and celery to the pot prior to cooking.

     Decide to put your meat on the grill or smoker. You can smoke on a grill, its easy. and you are completed for about 3 hours. Time to see football . After the three hour time check and turn over anything you are cooking probably add some char coal and check your water the pan.
     wait about another two to three hours and if your cooking ribs , the meat will have started to draw from the bone some. That's a good thing. if its a brisket or pork shoulder you come back after another three hours..Ribs should be done for this time frame cooking at 275 degrees. check you internal temps staying away from any bone with your meat thermometer. let it cook for a longer time .Smoking Briskets and Pork shoulders can take about 10-12 hours so they will not be ready.      But if its is raining or its cold it may take longer .That will add some babysitting time period. With some practice you will know how to counteract the weather. I cook year around , even with snow on the yard. I just like to use my grill and smoker as often as I can. but back to our do almost nothing or lets say not too much.

     4. Add the flour and cook, stirring until the flour is lightly browned.
     5. Stir in the minced garlic and thyme and cook for a few seconds until fragrant. 
    6. Increase the heat to medium high. Add the broth slowly, whisking until well mixed. Add the bay leaves. Bring to a boil. Scrape the bottom of the skillet to loosen any brown bits on the bottom of the pan.
     7. Return the chops to the skillet and cover them with the onion gravy. 
    8. Reduce the heat again to low and simmer until the pork is tender and done, about 30 minutes. 
    9. Remove the chops to a platter and cover with foil to keep warm. Increase the heat to medium high and cook the gravy rapidly until the sauce is reduced to a gravy thickness. Remove the bay leaves. Add the parsley. Adjust seasonings if needed with salt and pepper.

Two or even three days after making, its flavour has developed into a robust but mellow richness that is perfectly comforting and needs nothing more than some crusty bread to make a satisfying and nutritious meal. 
     There is nothing fancy about this soup, its origins are the home kitchens of rural Italy where you use good ingredients and don't need to mess with them. If you are a dedicated foodie and can get your hands on some Castelluccio lentils from the high Piano Grande in the Apennine mountains of Italy, then these are just the best, but any variety of small brown lentil works well here.Lentil Soup Recipe1 medium onion2 carrots2 sticks celery3 tablespoons olive oilยฝ tin tomatoes chopped with their juice cups brown lentils rinsed and checked for bits1 l stock or watersalt and pepperChop the onion, carrots and celery quite finely. Warm the olive oil in a heavy based pan and saute the vegetables gently till softened. Add the tomatoes and cook over a medium heat with the lid off until all the liquid has evaporated and you have a thick sauce consistency. 
     Season with salt and pepper. Stir in the lentils and cook for a minute stirring, before adding the stock or water. This soup is tasty enough just to use water here, but if you happen to have some ham stock in the freezer left over from the Christmas gammon it will add a whole new dimension to the soup. Simmer for about 40 minutes until the lentils are tender. The cooking time depends on the variety of lentils, so you can check after 30 minutes. Add more water if the soup gets too thick as the lentils can absorb a lot of water. Serve with crusty bread and butter and perhaps a sprinkling of freshly grated parmesan on top.This makes enough for four to six good servings, but you can easily double the amounts and freeze half for another day. Or if you are having the soup two days running and want to vary it a little, on the second day add some more water to it and once it is heated throw in a couple of handfuls of a small pasta shape to cook in the soup. The pasta will take on the flavour of the soup and make a wonderfully hearty complete meal. You never know, even kids who profess not to like anything as healthy as a lentil could be tempted by the pasta and discover that lentils actually are quite tasty after all!

     Halloween has always been one of my favorite holidays. Probably involved because of the large amount of sugar. As a child (or adult for that matter), what other holiday is screaming your face that dressing funny and so full of sweets and candies, and not with you? And then there's all the fun (and sometimes absolutely disgusting) things that will be needed to meet your friends for Halloween, you would never dare to serve on another holiday. The only time it is permissible and even desirable, worms, spiders collected, bats and insects in your food. Happy Halloween! Halloween Crisp Treats1 / 2 cup rice crispy candy cups cups cups cereal9 butter10 mini marshmallows2 corn3 / 4 cup mini chocolate chips Candy pumpkins Orange food coloringGrease a large pan of jelly roll. Melt in a large saucepan over low heat butter and marshmallows together. 
     Stir until it is smooth. Place the crispy rice cereal, candy, and give mini-chocolate chips in a bowl and mix well. Mix the orange food coloring into the marshmallow mixture and stir well. Put the mixture into marshmallow mixture of cereal and mix together quickly. Spread the mixture into the buttered pan and press into jelly roll padellacon hands well greased (butter works best).
